Spanish Pork Roasted Pepper Potato Stew

This bold Spanish stew is perfect for the Super Bowl this weekend. The Sweet Spanish Paprika and roasted peppers packs a punch of flavor without adding heat. Since the recipe can be made in a crock pot prep in the morning and it will be ready by game time.

Ingredients:
2 lbs of Country Boneless Pork Ribs
2 teaspoons Sweet Spanish Paprika

Rosary Rosemary Salt to finish
1 onion sliced
1 jar of roasted peppers with liqoud
1 red bell pepper small dice
1 cup of chopped celery
2 cups of diced potatoes peeled
1 teaspoon of cumin
3 cups of chicken stock
1 cup of red wine
4 Tablespoons of Pomegranate Balsamic
3 Tablespoons of We Olive Jalapeno Olive Oil (For Drizzling)


Combine all ingredients in crock pot and cook on low for 8 hours or high for 6. 
 
Finish with Rosemary salt and serve with toasted crusty bread with melted manchego cheese. Drizzle stew with Jalapeno Olive Oil for an extra punch of heat.
